Storage and Prep
For a perfect roast, cook at 220°C (fan 200°C) for 20 minutes, then reduce to 180°C (fan 160°C) and roast for 15 minutes per 500g for medium-rare. Let the joint rest for at least 20 minutes before carving to allow the juices to redistribute.
Serving Suggestion:
