Storage and Prep
For best results, sear the joint in a hot pan to lock in flavour, then roast slowly at 160°C (fan 140°C) for about 25 minutes per 500g for medium-rare. Always rest the meat for at least 15–20 minutes before carving to keep it juicy and tender.
Serving Suggestion:
Serve thinly sliced with classic roast potatoes, seasonal vegetables, and a rich red wine or onion gravy. Leftovers make excellent cold cuts for sandwiches or beef salads the next day
