Storage and Prep
For a juicy result, roast at 180°C (fan 160°C) for around 30 minutes per 500g, depending on how well done you prefer it. Always rest the meat for 15–20 minutes before carving to retain juices.
Serving Suggestion:
Serve medium-rare with horseradish sauce, crispy roast potatoes, and seasonal greens. The full-flavoured meat also pairs beautifully with a rich red wine jus or peppercorn sauce
