The fillet beef joint is the most tender and luxurious cut of beef, taken from the heart of the loin. With its ultra-fine grain, buttery texture, and subtle, delicate flavour, this boneless joint is a true centrepiece for special occasions and elegant dinners.

Naturally lean and incredibly soft, the fillet joint is best cooked medium-rare to medium to preserve its tenderness. It requires minimal seasoning to shine, and carves effortlessly into melt-in-the-mouth slices.

Storage and Prep
Sear the fillet in a hot pan to form a golden crust, then roast at 200°C (fan 180°C) for 12–15 minutes per 500g for medium-rare. Always rest the joint for 15–20 minutes before slicing to retain its juices.

Serve with dauphinoise potatoes, seasonal greens, and a rich red wine or béarnaise sauce for a restaurant-quality experience at home.
