Storage and Prep
Sear the fillet in a hot pan to form a golden crust, then roast at 200°C (fan 180°C) for 12–15 minutes per 500g for medium-rare. Always rest the joint for 15–20 minutes before slicing to retain its juices.

Serve with dauphinoise potatoes, seasonal greens, and a rich red wine or béarnaise sauce for a restaurant-quality experience at home.
